Côtes de Provence is a confluence of elements: Mediterranean warmth tempered by coastal winds, soils that drain and breathe, nights cool enough to preserve what the day has built. Here, rosé is a discipline, refined over generations into wines of pale elegance, bright acidity, and unmistakable sense of place.
We sought out this region for its integrity. For vineyards where balance matters more than volume, where the land is respected, and where the vision of rosé aligns with our own.
Organic from the Ground Up
The vineyards we work with are farmed organically, cultivated without synthetic intervention and harvested when sugar and acidity still hold each other in check.
Before blending, each lot is evaluated individually. Some components bring aromatic lift, others contribute texture or length. We compose, selecting and layering until the wine reveals complexity that feels effortless. This thoughtful assembly allows Nuvage to maintain its character while honoring each vintage.
Wine First, Always
Many dealcoholized wines begin with the end in mind, reverse-engineering a product to fit a process. We do the opposite.
Nuvage is made as wine: fully fermented, traditionally vinified, complete in every sense. The wine must stand on its own first, with the structure, aroma, and balance that define Provence rosé. Only when it has reached its intended expression do we remove the alcohol.
This is the difference between a beverage engineered to approximate wine and a wine that has simply been altered.
Preserve Essence
After dealcoholization, the wine is carefully rebalanced. We assess acidity, texture, and length, adjusting with precision until harmony is restored. Every decision matters: varietal selection, harvest timing, fermentation, blending, dealcoholization parameters, and final adjustments.
The goal is not simply to remove alcohol but to preserve the essence.
